Yes, Mr. Parriott is known to have said that FK was an anvil weighing him down -- or was it an anchor dragging him back? I think it was the anvil -- and that he needed to put a thorough end to it to free himself creatively and professionally. He was at the time getting ready to start work on Dark Skies.
I don't think it was ever learned whether he had an original ending vision in mind from the start. He might well not have. That wasn't really how TV series worked back then in the US, of course, when the idea for Nick Knight > Forever Knight first came to him and his writing partner; the professional hope was always that shows would continue forever and ever, raking in steady money for their networks.
